- Take 1 cup rice
- Get 3 tbsps Ghee
- You need 1/2 tsp Turmeric
- Get 2 Cup Hot Water

Instructions to make Kanika- Sweet pulau:
- Wash a the soak the rice in water for 30 mins
- Drain and spread the rice on a sieve and let it dry for 5-10 mins
- Add 1 tbsp ghee and the turmeric to the soaked and dried rice and mix well. Leave it for 30 mins.
- Heat a pan with the remaining ghee and fry the Cashewnuts and Raisins. Dry it out of the frying ghee and keep aside.
- Add the bay leaves, cloves, cinnamon, peppercorns and cardemoms. Saute it for a minute till fragrant.
- Add the rice to the pan and gently(make sure that the rice granules don't break) saute it with the spices and frying ghee on low flame for 2- 3 mins.
- Add hot water and salt to the rice,cover it and let it cook on medium flame till it gets 3/4th cooked or 8-10 mins.
- Finally add the sugar and half of the fried Cashewnuts and Raisins to the rice(which would me mushy). Stir it gently.
- Cover it and keep it on low flame for another 2-3 minutes
- Switch off the gas and serve the steaming and fragrant pulau garnished with the remaining Cashewnuts and Raisins.
