- Get 1 cup basmati rice
- Get 1/2 cup sugar
- Get 1 tbsp salt
- Prepare 1 tbsp turmeric powder
- Prepare 2 tbsp desi ghee

- Provide 2-3 cloves
- Prepare 2-3 green cardamom
- Provide 1 black cardamom

- Use 4 cup Water for soaking and cooking
Steps to make Kanika (sweet rice):
- Soak rice in 2 cups of water for half an hour.
- Heat a pan. Add 2 tbsp ghee. Add bay leaves, cinnamon, black pepper, cloves, both cardamom and saute. Then add cashew nuts. When it turns golden add raisin and coconuts. Saute a little.
- Then drain the water of soaked rice and add it to the pan. Add salt, sugar and turmeric powder. Mix it well. Now add 2 cups of water and first give it a boil in high flame. Then cover it with a lid and keep the flame low to medium.
- Check it after 15 mins. Stir it. Keep it for another 5 mins. If the rice is dry and cooked perfectly it's done. And ready to serve.
