- Prepare 10 Arbi (taro root) leaves)(patra)
- You need 400 gm gram flour
- Provide 1 cup wheat flour (karkara)
- Take 1 cup curd
- You need 60 gm Jaggery
- Get 5 crushed green chillies
- Take to taste salt
- Use 1/2 tsp red chilli powder
- Use 1 tsp garam masala
- You need 1 tsp turmeric powder
- Use 1 tsp cinnamon Powder
- You need 1 tsp black pepper powder
- You need as needed water
Steps to make Patter veli or Arbi na pana:
- First of all take all patra and wash it.then with the help of knife clean and cut all veins of it carefully.for that took one by one patra on a thali and cut veins carefully and wash all patra.Take besan flour and karkara wheat flour…mix it in a big bowl. Add mixture of curd and jeggery in it.Mix it properly. Add crushed green chillies, red chilli powder, haldi,garam masala,salt to taste.Then add 1tsp cinnamon and 1tsp black pepper powder and mix it well.
- Add 1 and 1/2 cup water and make fine thick water. You should make better like paste which can easily spread on patra.
- Spread thick paste like better on patra one by one and roll it.first trun both sides and then bottom..then roll it in cylindrical shape as shown in the picture. Put three or four patra in a each roll.
- On the other side take water in a steamer and preheat it for 15 minutes. Put all the roll s of patra (3 rolls)first vertically. Then let pass out the steam through patra rolls.Now put remaining rolls(3 or 2 rolls)horizontally in the steamer. Cover the lead of it. It takes 40 to 45 minutes to steam it.check with the knife whether it cooks or not.off the flame..
- After 30 minutes of rest open the steamer.Took all the rolls of patra one by one and cut it into small pieces. Let's fry it.
- Put a pan or kadai on flame. Add 5 to 6 tbsp oil in it.Add 1 tsp mustard seed and make tadka.Also add 1 tbsp til to tadka and then 1 tsp hing (asfoetida).Then add all patra pieces in it and stir it. Keep it on the flame for 15 minutes. Between this stir it constantly. Now your patra is ready to serve.Garnish it with coriander and coconut powder. (Here I use pomegranate seeds to decorate it)
