  1. You need Sutti papdi Val papdi mix 250 gm (other papdi can also use
  2. Get 200 gm mix Dhanya from papdi and green peas
  3. Use 2 tsp soda powder

  5. Take 8-10 florets of cauliflower
  6. Use 1 raw banana
  7. Prepare 1 purple yam
  8. Take 2-3 potatoes
  9. Provide 100 gm tindola
  10. Use 1 sweet potato
  11. Prepare Ingredients of Masala Mix:
  12. Take 1 bunch coriander
  13. Use 2 small bunch of green garlic
  14. Prepare 2 tsp ginger garlic chilli crushed
  15. Get 2 tsp sesame seeds
  16. Get 1 cup crushed groundnuts
  17. Use Masala: red chilli haldi dhana jeera powder garam masala hing
  18. You need 2 tsp Sugar
  19. Provide 2-3 cups grated coconut
  20. You need Lemon juice
  21. You need oil and salt
  22. Prepare Ajwain and jeera for tadka
  23. Provide Muthiya (Readymade)
Instructions to make Undhiyo:
  1. In a bowl take all masala mix ingredients and mix well Check the salt and Keep aside
  2. Chop all the veggies in cubes and deep fry them (don't overcook) for 1 mum to each
  3. Surti papdi and all papdi dhanya to be soaked in water with soda powder half and hour before then wash and pressure Cook them with little oil and 1cup water for 1-2 whisles. Keep aside let it rest
  4. In a pressure cooker add more oil and give tadka of jeera and Ajwain. Now give 2-3 repeat layers of steamed papdi then masala and muthiya then veggies then masala and muthiya.and same again. Masala should spread evenly so that can mix well. Add oil and 1 cup water on top. Cover
  5. Place the cooker on slow flame and let it cook for half and hour.let it rest when cooled completely open and serve with chopped coriander.
