- Heat a big pot. Add oil, methi seeds, mustard, jira, hing, green chillies, curry leaves. Let dem splutter
- Add the besan and keep stirring on slow gas til it's golden brown
- Add salt and dry spices and 2 litres water and chole or chana and mix well and check dat there r no lumps. Now add potatoes and gawar and let it boil.
- Now slow the gas and cover the pot. Keep the cover slightly open so dat the curry should not over flow
- Heat 1 litre water in another pot and add tamarind into it and keep aside to cool it
- After 15-20 min open the curry and add cauliflower and mix well and cover it again
- After 15-20 min add the lady fingers and strained tamarind water. Add extra tamarind water if u like
- Let it boil on fast gas and dein cover and simmer it until done
