The ingredients needed to cook Kanchipuram Idli:
- Prepare 1 cup parboiled rice (ukada rice)
- Take 1 cup idli rawa
- Take 3/4 cup whole white urad dal
- You need 1 cup chopped mix veg (french beans carrot and peas)
- You need 1/4 cup cashewnuts pieces
- You need 1/2 tsp Turmeric Powder
- Use 1/2 tsp eno
- Provide to taste Salt
- You need Oil for greasing
- Use To serve with idli.
- You need Coconut chutney
- Prepare Sambhar
Instructions to make Kanchipuram Idli:
- Wash (3-4 times)and Soak parboiled rice,idli rawa and urad dal separately for 6-8 hours.
- First grind soaked urad dal in wet grinder. Then add soaked parboiled rice and grind for few minutes. Then add half of soaked idli rawa..grind again.
- Remove grinded idli batter in big vessel. Add remaining soaked idli rawa. Mix well. Cover and leave it for fermentation overnight.(8 hours).
- Next day..add chopped mix Vegetables, cashew nuts pieces,salt, turmeric powder and eno. Mix gently.
- Pour laddleful of prepared idli batter in each grease idli mould.
- Pressure Cook without whistle..for 12-15 mins. Stand for 5 mins.. before opening the cooker lid.
- Remove prepared Kanchipuram Idlis from idli plates carefully with spoon.
- Serve / Relish Delicious Kanchipuram Idlis with Coconut chutney and sambhar.
