- You need 1 tsp grated Jaggery
- Take 2 tbsp Oil
- Provide 2 sprig Curry Leaves
- Prepare 2-3 tbsp chopped Coriander leaves

- Provide 2 chopped Tomatoes
- Take 2-3 tbsp Tamarind pulp
- Prepare 1 tsp Turmeric
- Take 8-10 sambar Onions peeled
- Prepare to taste Salt
- Get For pressure cooker:
- Get 1 cup Toor Dal
- You need 3 cups Water
- Get 1 tsp Turmeric
- You need For Sambar Masala:
- Prepare 6-8 dry red chillies
- Provide 1 tsp Fenugreek Seeds
- Prepare 4 tbsp grated Coconut
- Provide 5 tbsp coriander seeds
- Get 1.5 tsp Cumin seeds
- Prepare 2 tbsp chana Dal
- Get 2 tbsp urad Dal
- Prepare 1 tbsp Oil
- Get Vegetables:
- You need 1 Potato cubed
- Take 1 Carrot cubed
- Provide 5-6 beans chopped
- Get 1/2 cup yellow Cucumber cubed
- Use 2-3 small brinjals chopped
- Take 1/2 cup ladies finger chopped
- You need 1 cup cubed Pumpkin
- You need For Seasoning
- Use 2 tbsp Ghee
- Prepare 1 tsp Mustard Seeds
- Provide 1 tsp Hing
- Use 2 dry red chillies
- Provide 1 tsp urad Dal
- You need 1/2 tsp Cumin seeds
- You need 1 sprig Curry Leaves
Steps to make Udupi Sambar:
- Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside
- In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside
- In a separate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chilies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water, cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well
- Add tamarind pulp, dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes
- Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing, dry red chillies. Once urad dal browns, add curry leaves. Switch off
- Add seasoning to sambar. Mix well. Add coriander leaves. Serve hot with rice, dosa, idli Vada etc
