The ingredients needed to prepare Ladies Finger Gojju:
  1. Get 15 - 20 Ladies finger - cut into thin circles .
  2. Use 2 chilli Dry -
  3. Take 1/2 tsp Mustard -
  4. Prepare 1/2 tsp Fenugreek seeds -
  5. Get Tamarind water . - small ball s   ize , soaked in   warm
  6. You need Gojju powder
  7. Provide curry leaves . - few
  8. You need Jaggery water - small piece immersed in a
  9. Take to taste Salt -
  10. Provide 3 tsps Oil -
  11. Take Ingredients for Gojju powder
  12. Get 1.5 tbsps Bengal Gram Dal (kadala parippu) -
  13. Prepare 10 chillis Dry red -
  14. Prepare 1/2 tsp Asafoetida (Hing) -
  15. Use 1/2 tbsp Coriander seeds -   ( a handful)
  16. Provide 2 tsps Cumin seeds -
  17. Take 5 - 6 Black pepper Corns -
  18. Take 2 sprigs Curry leaves -
  19. Take 1 sesame seeds -  sp
  20. You need 1 tsps oil  -
Steps to make Ladies Finger Gojju:
  1. Procedure to make Gojju powder
  2. This is just a one time activity. Once you have the powder stocked up, you can reuse it for making a variety of Gojjus at the snap of your finger! Just make sure you store it in an airtight container locking in the fragrance.
  3. Heat pan to high, Pour in the 1 tsp oil. Once oil starts fuming, bring down heat to low. Add the asafoetida, followed by dry red chillis, followed by the bengal gram. Keep sauteing. Once the color of the gram changes to light golden, add in the coriander seeds, cumin seeds and pepper corns. Turn off gas and add the curry leaves. Keep tossing gently and then transfer the mixture to a plate to cool down.
  4. Heat the pan to low, and add the sesame seeds and roast a little. Keep this separately.
  5. In a mixer grind to a fine powder the contents in step 1. Transfer to a bowl. Then grind the sesame seeds separately to a coarse powder. Add back the contents powdered previously, mix it well, and let the mixer do one more more gentle round to blend the contents together. Reason for doing this is that if the sesame seeds were grounded along with the rest of the mixture, it may not get grounded well.
  6. Store the powder in an airtight container.
  7. Procedure to make Gojju
  8. Heat pan to high, pour in the oil. Once hot lower heat, and add mustard seeds. Once the mustard sputters, add the dry red chilli, followed by methi seeds and urad daal. Almost immediately add in the chopped ladies finger. Keep sauteing till the ladies finger is well fried. Add the turmeric powder, salt and curry leaves.
  9.  Add the tamarind water. Add more warm water to the left over tamarind. Squeeze out the pulp from the tamarind into the pan. Keep heat to minimum and let the ladies finger cook in the tamarind water for about 5 mins.
  10. Add the gojju powder now and mix well.
  11. Add the water along with the jaggery, and bring it to a simmer. Turn off gas after a couple of mins.
  12. Gojju is ready. Good accompaniment with chapathis or with rice.
