The ingredients needed to cook Lauki Kofta Curry:
- Take 4-5 tbsp Cooking Oil
- Provide 1 Large Bay Leaf
- Prepare 1 tsp Cumin Seeds
- Get 2 Cloves
- Use 1 Piece Cinnamon Stick
- Prepare 2 tbsp Kashmiri Red Chilli Powder
- Prepare 2 tbsp Coriander Powder
- Prepare 1 tsp Garam Masala Powder
- Use 1/2 tsp Turmeric Powder
- You need 1 tsp Kasuri Methi
- Get as per taste Salt
- Provide 2 cups Tomato Puree (3 Tomatoes)
- Prepare 1 tbsp Coriander Leaves (For Garnish)
- Prepare 1 tbsp Fresh Cream (For Garnish)
- Use To be Ground into a Smooth Paste:
- Take 3 Onions
- Provide 3 Long Green Chillies
- Get 6 Cloves Garlic
- Prepare 1 Inch Ginger
- Take For the Lauki Kofta:
- Take 1 small Bottlegourd/Lauki (Grated)
- Take 200 gms Besan/Chickpea Flour
- You need 1 tsp Kashmiri Red Chilli Powder
- Provide 1/2 tsp Turmeric Powder
- You need as per taste Salt
- Provide as required Water (1 or 2 cups accordingly)
- Provide as required Oil (For Deep Frying)
Steps to make Lauki Kofta Curry:
- Firstly, wash the bottle gourd. Peel off the skin. Grate it and add it to a large mixing bowl. To it, add besan, kashmiri red chilli powder, turmeric powder, salt and water. Mix well to make a smooth paste.
- Heat oil in a deep frying pan on medium flame. Gently, drop in spoonful of batter and fry on both sides till golden brown. Drain on paper towels to absorbs the extra oil and set aside.
- To make a paste for the gravy, add onions, green chillies, ginger and garlic to a blender and blend into a smooth paste. Set aside.
- Blend the tomatoes into a puree and set aside. 3 tomatoes depending on its size, will give 2 cups tomato puree.
- In a pan, heat 4-5 tablespoons oil. Add bay leaves, cumin seeds, cloves and cinnamon and allow it to sizzle for few seconds.
- Next add the ground onion ginger garlic green chillies paste and saute it well till the raw smell leaves and water content reduced totally.
- Now add in the masalas. Ie. Kashmiri Red Chilli Powder, coriander powder, turmeric powder, garam masala powder and kasuri methi. Saute it well till the masalas are cooked.
- Add in the tomato puree and saute till oil appears at its surface.
- Add water according to required consistency and allow it to boil till you see traces of oil at the surface.
- Add the fried lauki kofta and salt. Cover and cook for few minutes.
- Garnish with coriander leaves and fresh cream.
- Delicious Lauki Kofta Curry is ready. Serve it immediately with roti, paratha, rice etc.
