- Provide 500 gm. okra / lady finger (bhindi)
- Prepare 1/4 cup oil
- Get 1 medium onion, sliced
- Get 1 tsp. cumin seeds
- Prepare 1 tsp. ginger garlic paste
- Get 2 medium tomatoes, finely chopped
- You need 1 tsp. coriander powder
- Take 1-1 1/2 tsp. red chilli powder
- Take 1/4 tsp. turmeric powder
- Provide 1-1 1/2 tsp. salt
Instructions to make Bhindi ki Bhujiya (Okra):
- Wash the okra and pat dry with absorbent paper (it should be dry to cut or they will become slimy).
- Slice of tops and and ends and discard. Slice okra crosswise into 1/2 inch thickness, keep aside.
- Heat oil in a pan. Add onion and sir fry until light brown.Add cumin seeds, ginger garlic paste and fry for few seconds.
- Add tomatoes, coriander powder, red chilli powder, turmeric powder and salt.
- Add 1/2 cup water; mix well and let it simmer for 10 - 15 minutes till water dries out & oil separates.
- Add okra; mix well and cook on low heat (stirring occasionally so they do not stick to the pan) until okra is done.
- Serve with Chapati.
