The ingredients needed to make Welsh Cakes:
  1. Get 225 g Plain Flour
  2. Use 50 g Butter
  3. Provide 50 g Lard
  4. Prepare 50 g Raisens
  5. Use 85 g Caster Sugar
  6. Prepare half teaspoon mixed spice
  7. You need half teaspoon baking powder
  8. Use 1 large egg
Steps to make Welsh Cakes:
  1. In a mixing bowl add the flour, sugar, mixed spice raisins, baking powder and a pinch of salt. Cut the lard and butter into small cubes. Add to the mix and using your fingers rub together until a crumbly dry mixture.
  2. Put onto a floured surface and roll out to about half an inch thick cut into 2 inch circles I used the top of a large glass
  3. Using a non- stick flat bottomed pan on a low heat add the circles of mixture and cook slowly each side until they start to Brown
  4. Once cooked put them on a cooling rack, dust with icing sugar and enjoy when cold. I managed to make about 10 Welsh cakes with the above mixture
