Instructions to make Punjabi kadhi:
- Take a big bowl. Put yoghurt,salt,turmeric powder and besan or gram flour in it. Make a smooth mixture without any lumps. Keep aside.
- Mix all the ingredients for pakoras in a bowl and fry pakoras. Keep aside.
- In a big pan or kadhai put 2 tbsp oil. Now add cumin seeds and fenugreek seeds. Let them crackle.
- Now add onions and saute for 2-3 minutes.
- Now add green chilli and ginger. Saute. Add broken red chilies.
- Add curd mixture and mix properly.
- When the curry boils add salt. Cook for 15-20 minutes.
- When the curry thickens add pakoras. Stir well.
- Switch off the gas. Cover the pan. Let pakoras soak in it for some time.
- Temper with red chill powder mixed in hot ghee.
- Sprinkle some fresh coriander and serve hot with roti or rice. Tastes best with rice.
