  2. Take 1/2 cup oil
  3. Use 100 gms Lady finger, Slit vertically
  4. Provide 50 gm cluster beans
  5. Prepare 3 medium potatoes peeled and chopped in big pieces
  6. Provide 2 tomatoes chopped
  7. Get 100 gm drumstick peeled and chopped
  8. You need 15-20 small florets cauliflower
  9. Prepare 1 small ball of tamarind soaked
  10. Use 7-8 kokam soaked
  11. Get to taste salt
  12. Get 1 teaspoon cumin seeds
  13. Provide 1 pinch hing / asafoetida
  14. Use 1 spoon grated ginger
  15. Provide 1prig curry leaves
  16. Get asneeded coriander leavers chopped
  17. You need 2 teaspoon chilli powder
  18. Use 1/2 teaspoon turmeric powder
Steps to make Sindhi kadhi Cheti Chand Special:
  1. Arrange all the ingredients
  2. In a kadai fry lady finger and cauliflower separately, and keep aside
  3. In a pan, heat oil add jeera, hing, grated ginger, and some curry leaves, after a minute add besan and lower the flame
  4. Roast besan on low flame, till the raw smell goes and it changes colour, stir in between, in the mean time keep water ready in a bowl.
  5. Besan has to become slight brown in colour but not burned, add water stirring continously, to avoid lumps, add sufficient water, because all the vegetables have to be cooked in same water.
  6. Once the water boils, add red chilli powder, salt, potatoes and cluster beans, vegetables have to go in order of cooking time, the one which takes more cooking time have to go first.
  7. Cover the lid half and cook on medium flame, once potatoes are half done, add drumstick and tomatoes, cover and cook on simmer flame.
  8. After 8 to 10 mins, drumstick, potatoes will be cooked and tomatoes will be mushy, now add lady finger and cauliflower, rest of curry leaves and simmer for 5 more minutes
  9. After 5 minutes add tamarind pulp and Kokam, bring kadhi to boil, Now adjust the seasoning, and garnish with coriander leaves.
  10. Switch of flame, serve curry with rice and Ladhi pav. It taste awesome with both😋 Enjoy..
