- Use 225 g self raising flour (or plain flour with 1/2 tsp of baking powder)
- You need 85 g caster sugar (or granulated)

- Put the flour and butter into a bowl and rub together until crumbly
- Add the currants, mixed spice and salt.
- Mix the beaten egg into the mixture until the dough is soft. Add just a splash of milk if it seems too dry
- Roll out the dough on a lightly floured work surface to the thickness of your little finger (5mm).
- Cut out rounds using a 6cm cutter (or smaller if you prefer).
- Grease a heavy frying pan and place over a medium heat. Cook the Welsh cakes for about 3 mins on each side until golden brown and cooked through.
- Serve with butter and jam or a sprinkling of sugar.
