- Provide For Dhuli Urad Dal
- Use 1/2 cup, Urad Dal wash and soak in water for 1-2 hours
- Use 2 Tomatoes medium, finely chopped
- Take 2-3 Garlic cloves, finely minced
- Provide 1/4 tsp Asafoetida -
- Provide 1 Ginger finely minced
- You need 1/2 tsp Kasuri methi , crushed
- Use 3 Green chilis
- Prepare 1/2 tsp Turmeric powder
- Provide 1 tsp Red chilli powder
- Get 1/2 tsp Coriander powder
- Take pinch Garam masala powder large
- You need to taste salt
- Take For Tadka
- Take 1/2 tsp cumin seeds
- Take 1/2 tbsp oil
- Prepare :-For Lauki Raita
- Prepare 2 cup Dahi (Curd)
- Use 1 cup Lauki boiled and mashed
- Provide 1/2 teaspoon Cumin powder (Jeera)
- You need to taste Salt,
- You need to taste Red chilli powder
- Provide Roasted cumin seeds for garnish
Steps to make Dhuli Urad Dal OR Lauki Raita:
- In a pressure cooker, add the soaked and drained urad dal, 2 1/2 cups water, turmeric powder, half of the minced ginger, one slit green chilli and salt and pressure cook upto 2 whistles.
- Alternately, you can add the urad dal in an earthen pot and cook over stove top or wood heat. Add at least 4-5 cups water and bring to a boil. Reduce flame and slow cook till the dal turns soft yet hold shape.
- In a small pan, add ghee and oil. Once it turns hot, add cumin seeds and allow to splutter. Add the kasuri methi and finely minced garlic and saute for a few seconds. Add the remaining minced ginger and green chilies and mix.
- Add red chilli powder and mix. Add chopped tomatoes and saute for 6 mts. - Immediately add this to the cooked dal and mix. Add garam masala powder and allow to simmer on low flame till the desired consistency is achieved. Adjust salt if required.
- Turn off flame and remove to a serving bowl. and serve with roti, pulka, paratha or rice.
- For Lauki Raita:-To begin making the Lauki Raita Recipe, get all the ingredients ready. In a large mixing bowl add all the ingredients.Stir all the ingredients well. Check the salt and spice levels and adjust to suit your taste.
- Transfer the Lauki Raita into a serving bowl and garnish some roasted cumin seeds and serve chilled and ENJOY!
