The ingredients needed to make Tava Fried Veggies:
- Use 2 boiled potatoes
- You need 6 boiled Arbi
- Prepare 6 bitter Gourd
- Use 6 Parval
- Use 12 lady' finger
- Prepare 4 medium sized tomatoes
- Provide 2 tbsp chopped coriander leaves
- Provide 1 ginger
- You need 2 green chillies
- Prepare 2 tsp Chaat masala
- Use 2 tsp degi mirch
- You need to taste Salt
- Get 1/8 tsp asafoetodia
- Provide 2 tsp coriander powder
- Use 1/2 tsp turmeric powder
- You need 1 tbsp fennel powder
- You need 1 tsp roasted cumin powder
- Get 1 tbsp kasuri methi
- Get 1/2 tsp garam masala
- Get 2 cups oil (for deep frying)
- Provide 1 tbsp desi ghee
- Take 6 tbsp butter or desi ghee (For garnishing)
Steps to make Tava Fried Veggies:
- Cut tomato, ginger and green chilli and make smooth paste (tomato puree) in mixer jar. Keep aside.
- Remove the skin of bitter gourd and parval. Now cut it long in the center of bitter gourd, parval and lady finger. Appling salt in bitter gourd & keep aside for 15 minutes.
- Now remove the skin of the Arbi & potato. Flatten the Arbi with palm and potato cut into the lengthwise.
- On high flame heat oil in a wok. Deep fry the all Veggies separately for a minute. Turn off the gas. Keep aside.
- Take a bowl combine 1 tsp Chaat masala, 1 tsp deghi mirch, 1/2 tsp salt. Mix well.
- Mix and fill 1/2 tsp of masala to deep fry Veggies. Keep aside.
- Goe making tava masala: Heat a pan on medium flame heat 1 tbsp desi ghee in a nonstick pan. Add asafoetida. Saute for 10 seconds. Now combine tomato puree. Saute, on low flame cook and stir continously. Now add turmeric powder, roasted cumin powder, 1 tsp deghi mirch, 1 tsp Chaat masala, salt to taste, coriander powder and crushed kasuri methi. Saute. Now cook the tomato puree until ghee separates from the sides. Switch off the gas. Gravy is ready, pour in the bowl. Keep aside.
- For Garnishing:: on low flame heat the non-stick Tava. Place all the Veggies on the side of the Tava. At the time of serving heat 1 tsp of butter in the middle of the Tava. On low flame, keep whatever Veggies you want to serve add 1 tsp tomato gravy masala, 1 tsp water mix well and fry for 30 seconds.
- Apply same method, to prepare all the Fried Veggies at the time of serving and garnish with coriander leaves. Enjoy!!
