The ingredients needed to cook Kadhi Vada:
  1. Get Kadi
  2. Get 3 cups buttermilk extracted while making homemade ghee OR
  3. Provide 1 cup curd and add 2 cups water
  4. You need 1 teaspoon mustard seeds
  5. Take 1 teaspoon cumin seeds
  6. Take 1 pinch Hing
  7. You need 1/2 teaspoon methi seeds
  8. Prepare 15-20 curry leaves
  9. Prepare 1/2 inch ginger grated
  10. Prepare 2 green chillies chopped
  11. Take 2 dry red chillies
  12. You need 1 tablespoon oil
  13. Use to taste Salt
  14. Take 2 teaspoon Sugar optional if the buttermilk is sour
  15. You need 1/2 tablespoon gram flour (besan)
  16. You need leaves Coriander
  17. You need Vada
  18. Prepare 1 cup urad dal
  19. Prepare 1 teaspoon cumin seeds
  20. Prepare 1 small piece of ginger
  21. Use 1/2 teaspoon hing
  22. Get to taste Salt
  23. You need as required Oil for frying
Instructions to make Kadhi Vada:
  1. Soak urad dal for minimum 3 hours.
  2. Once soaked blend it in mixer along with ginger, cumin seeds, hing and ginger add little water
  3. Once it's blended add salt and whisk the mixture for 4-5 minutes. Keep aside for 15- 20 mins.
  4. Heat oil in kadai, we your hands and drop small portions of dal mixture in hot oil and fry on low medium flame so that it cooks properly from inside.
  5. Once it's golden evenly from all sides remove and keep aside.
  6. For kadi.
  7. In a bowl take buttermilk and add besan and mix properly so no lumps are formed
  8. In case you are using curd, whisk curd, water, besan properly for smooth buttermilk mixture.
  9. In a kadai heat oil add mustard seeds, cumin seeds, hing, methi seeds, grated ginger, red chillies, chopped green chillies, curry leaves and fry tadka on low flame nicely.
  10. Add the buttermilk mixture and add salt. If the buttermilk is sour you can add sugar to balance the taste.
  11. Cover and allow it to boil on low flame.
  12. After 4-5 mins switch off the flame.
  13. To serve take 3-4 vadas in a bowl, add hot dahi kadi and garnish with coriander leaves and serve it's a very nice dish to start a meal as it has all flavours 😊
