  7. You need 1cup+¼ cup coriander leaves finely chopped

  11. Prepare 1+½ tsp carom seeds
  12. You need 2 tbs coriander powder

  14. Provide 2 tsp green chilli paste
  15. Get 2 tsp ginger paste
  16. Use 2 tsp garlic paste
  17. You need 1/2 tsp asafoetida
  18. Provide 1 tsp Garam Masala powder

  21. Provide 2 tbsp sugar
  22. Prepare As per taste salt
  23. Provide 3 tbsp+1tbsp peanut oil
  24. Prepare Methi ni bhaji na muthiya (fenugreek leaves fritters)
  25. Get 1 cup wheat flour
  26. Prepare 3/4 cup jowar flour
  27. Provide 3 tbsp chickpeas flour
  28. Take 250 gms fenugreek leaves
  29. Get 2 tsp crushed peanut
  30. You need 2 tsp ginger chilli garlic paste
  31. Provide 1/4 tsp turmeric powder
  32. Get 1/4 tsp asafoetida
  33. Provide As per taste salt
  34. You need 1/4 tsp sugar

Steps to make Surti undhiyu:
  1. Mix all ingredients of muthiya add little water if needed, make ball and fry.
  2. Mix crushed peanut,sesame, coconut, 1/2 tsp turmeric powder, garlic ginger and chilli paste, red chilli powder garam masala,cinnamonpowder,asafoetida, sugar, salt, carrom seeds 1tsp, coriander powder, green garlic 1cup, coriander leaves 1cup, oil 1tbs. Mix well.
  3. Take ¼ masala and stuff this mix Masala in brinjal and banana, cut purple yam and sweet potatoes into 1 inch piece and spread ¼ mix masala, remaining spread half masala to papdi.
  4. Heat oil in deep heavy bottom pan add carom seeds when splutter add half papdi stir for 2 minutes, now make layer of stuff brinjal, sweet potatoes, purple yam cover it with left papdi,add 1/4 cup water and cover it with lid.
  5. Cook it for 40 minutes at low flame.
  6. After 40min. add methi muthiya and stuff banana again cover with lid for 10 minutes.
  7. Garnish it with green garlic and coriander leaves.
