The ingredients needed to prepare Eggless Fruit Cake:
- Get 1 cup Whole Wheat flour
- Provide 1/4 cup Semolina
- Get 1 cup Jaggery grated
- Get 1 tsp Baking powder
- Use 1/2 tsp Baking Soda
- Get 50 gms Butter (can increase to 100 gms)
- Provide 1 tsp Vanilla Essence
- Take 1 cup Dry fruits and nuts
- Prepare 2/3 cup Milk (½ cup + 3 tbsps)
Instructions to make Eggless Fruit Cake:
- Take the Jaggery in a sauce pan and heat up for a min or two and switch off the flame.
- Add the milk to it and stir till the jaggery is dissolves completely. Strain the Jaggery in a mixing bowl.
- Add melted butter, vanilla essence and mix well.
- Add the flour, Semolina, baking powder and baking soda over the wet ingredients and gently fold it and make a smooth batter without lumps.
- Take ½ tsp flour in a small bowl and mix all the dry fruit nicely in the flour. Add the dry fruits to the batter reserving some for putting on the top. Mix well.
- Grease a cake pan and preheat oven@180 for 10 mins
- Pour the batter over the greased cake pan. Sprinkle some dry fruits and nuts on top of the cake.
- Bake the cake for 35-40 mins. Start checking from 35 mins. A tooth pick inserted should come out clean.
- Remove from the oven, let it cool dowm completely, invert, cut and serve.
