  1. Prepare 500 ml full fat milk
  2. Get 1 cup sohan papdi (have used leftover)
  3. Take as needed condensed milk / sugar
  4. Provide pinch saffron strings
  5. You need 1 tsp vanilla custard powder
  6. Prepare 1/2 tsp cardamom powder
  7. Prepare 100 gm fresh whipping cream
  8. Prepare as needed some almonds and pista flakes

  1. First in a pan add milk and bring it up to a boil. simmer the flame, add saffron and cook until it reduce 1/4.add condensed milk/ sugar mix well.
  2. Now add 2 tbsp of cold milk in a custard powder and mix well to make paste.
  3. Add custard mix to the boiling milk and stir well.cook for 2 - 3 mins.on low flame.add almonds and pista too.
  4. Add crushed sohan papdi and stir continuously, the mixture will become thick after adding sohan papdi.
  5. After mixing well switch off the heat and let the mixture cool completely.
  6. Now in a bowl add whipping cream beat for few minutes.add prepared sohan papdi milk mixture to the cream (little at a time) and beat continue till the end.
  7. Pour mixture into the airtight box or in a bowl gently place butter paper on the icecream mixture and then cover with lid or foil to avoid ice crystals.
  8. Keep it in refrigerator overnight to set completely.sohan papdi icecream is ready to serve.
