- Take To make cottage cheese dumplings/ chhana balls-
- Get 2 cups cottage cheese/ chhana
- Prepare 1 tbsp maida
- Prepare Few pinch turmeric powder

- You need 2 litre whole milk
- Get 3-4 tbsp lime juice

- Get 2 potatoes cuts into small cubes
- You need 1 cauliflower cuts into medium sized florets

- You need 1/4 tsp cumin seeds
- Provide 2 bay leaves

- Get 2 green chillies(splitted)

- Get 1/2 tsp ghee
- Provide 2-3 tbsp refined oil

Steps to make Phulkopi,aloo diye Chhanar Dalna:
- Heat the milk, when it starts to boil, simmer the flame & add the lemon juice. Stir well.
- Heat until the water clearly separates from the milk. Switch off the flame & let it cool for few mints.
- Then put the cuddle milk in a strainer. Collect the chhana after removing the excess water on a.bowl or plate.
- For making the chhana or cottage cheese balls knead the chhana or cottage cheese with 1 tbsp maida/ refined flour,turmeric powder & salt.
- Heat oil in a kadhai & put the cottage cheese balls carefully into the oil. Fry them until golden brown. Keep them aside.
- In the same oil fry the cauliflower florets & then the potatoes until those turn golden brown& keep them aside.
- Now in the oil add cumin seeds, bay leaf. Wait for them to crackle.
- Add chopped tomatoes, slitted green chillies, turmeric powder, cumin powder, ginger paste red chilli powder, salt & saute until the oil separates.
- When the gravy starts leaving oil from sides add water & sugar.Add the fried cauliflower florets & potato pieces.
- Simmer & cook for 5 mints on low flame till the vegetables soften.
- Lastly, add the fried chhana balls / Cottage Cheese balls into the gravy & mix them very gently.
- Cook for another 2-3 mints till desired consistency or the aroma comes from the gravy.
- Add ghee,garam masala powder & mix it well with the Dalna. Then switch off the flame.
- Garnish it with chopped coriander leaves.& serve it hot on a serving plate with luchis, parathas or rice.
