- Cut cauliflower into small florets.Blanch them in hot water for few minutes.Drain water completely and set aside.For garam masala dry roast 2 tsp cumin,1 tsp coriander,bay leaf,3-4 cardamoms,1 stick cinnamon,2 cloves,1 dry red chilli,few peppercorns.Grind to a fine powder and preserve this masala for use in other curries also.Wet grind ginger paste.Heat mustard oil and fry cubed potatoes till half done.Fry cauliflower till golden spots appear on the surface.
- Remove fried cauliflower to a kitchen paper towel to remove excess oil.In 1 tsp oil sprinkle cumin seeds and bay leaf.When they sizzle,add asafoetida.Then add ginger and tomato puree.Add turmeric,red chilli powder,salt and sugar to taste.Also add aloo dum masala and fresh cream.Toss all.Add the fried cauliflower, potato and green peas.Add water and boil in moderate flame till done.Sprinkle garam masala,ghee and chopped coriander.Serve hot with rice or any Indian flat bread.
